Pasta without having to cook anything? It actually works really well: thanks to courgettes. And with a creamy herb dressing, it’s especially delicious – and a healthy vegetarian recipe too, of course.
Ingredients for this healthy vegetarian raw food recipe:
- 2 large (about 800 g) mixed courgettes (yellow and green)
- 1 tbsp. fine Himalayan salt
- ½ cup raw cashew nuts (soaked in water for at least four hours, at best overnight)
- 2 tbsp. water
- 2 tbsp. native olive oil
- 2 tbsp. freshly-squeezed lemon juice
- 1 tbsp. balsamic vinegar
- ½ cup finely-chopped fresh basil
- ¼ cup finely-chopped fresh parsley
- 2 tbsp. fresh mint leaves
- Freshly-ground pepper
- Raw pine nut parmesan to sprinkle
Healthy Recipe - Preparation:
First wash and dry the courgettes, and then cut off the ends. Position a grater so that the side with the largest grating holes is facing upwards. Now grate the courgette with long, up and down movements only using a little pressure, so that you get long thin strips of courgette – this will become your healthy raw food spaghetti.
Lightly salt the courgettes and place them in a sieve over a bowl for 20 minutes. This allows unwanted liquid to drain off. You can also carefully press the courgette spaghetti lightly. Dab it dry with a clean tea towel, so that the remaining excess liquid is absorbed.
Now drain the soaked cashew nuts. Put them in a high speed food processor, together with the water, vinegar, olive oil and lemon juice. Then blend everything together until the mixture has a smooth, even consistency. After that, adding each separately, put in the basil first, then the parsley and finally the mint leaves. Go on mixing until the herbs are evenly distributed.
Spread the mixture over a bed of pine nut parmesan, which can also be the garnish for the top layer, together with pieces of fresh bell pepper. This healthy, summer, vegetarian raw food recipe is best enjoyed as soon as you have made it.

- ½ cup pine nuts
- 2 tbsp. whole sesame seeds
- 2 tbsp. sunflower seeds
- 1 tsp. zest of lemon
- 2 tbsp. nutritional yeast
- ½ tsp. Himalayan salt
Healthy Vegetarian Recipe - Preparation:
Briefly mix the pine nuts, sesame seeds, sunflower seeds, lemon zest, nutritional yeast and salt in a food processor. Don’t mix them for too long, so that some pieces stay whole for that extra-crunch effect. Season to taste. It can also be stored in a sealable container in the fridge.
